Chicken Apple Crunch Salad
Overview:
Basil-Lime Pineapple Fruit Salad is as refreshing as it sounds. The low potassium fresh fruit in this salad adds fiber and is very low in sodium.
Ingredients:
- 4 cooked chicken breasts (approx 500g)
- 1 large gala apple (approx 200g)
- 50g celery
- 30ml spring onions
- 40g dark raisins or (dried) cranberries
- 75g low-fat mayonnaise
- 15ml low-fat sour cream
- 5ml lemon juice
- 1/4 teaspoon cinnamon
- 1/4 teaspoon black pepper
Preparation:
Cube cooked chicken. Dice apple and celery. Chop spring onions. Combine chicken, apple, celery, spring onions and raisins in a large salad bowl. Whisk together mayonnaise, sour cream, lemon juice, cinnamon and black pepper. Pour over the chicken-apple mixture and toss. Refrigerate to chill prior to serving.

Renal and Renal Diabetic food choices: 3 meat, 1 fruit – low potassium Carbohydrate choices: 1 The raisins can be eliminated to reduce potassium content to 270 mg per serving or be replaced by fresh or dried cranberries. Spoon chicken salad in a pita pocket to serve as a sandwich or serve on top of leaf lettuce to make a salad.
